Fun, Festive and Healthy!

Christmas is the time for good food and good company, and while the stockings may be bulging with chocolate and lollies, we all want to make sure there are healthy options for our family on Christmas. Along with your favourite dips, this tasty veggie platter will go down a treat with the whole clan - and looks great too!

Ingredients

3 cups of broccoli

1 punnet of cherry tomatoes

A yellow capsicum, cut into strips

1 ½ cups of cauliflower

Celery cut into appropriate size to use as a trunk - we used one large piece, but celery sticks work as well.

Preparing your tree

  1. Give the veggies a quick wash and dry.
  2. Trim the broccoli and cauliflower to the size of your liking.
  3. Depending on how everyone likes their veggies, cook them appropriately. We like them raw, some like them steamed - both are great!
  4. Use the cauliflower to lay a bed of 'snow' on your plate.
  5. Put the celery in your snow to create your tree trunk.
  6. Now, use the broccoli to create the body of your tree.
  7. Put the cherry tomatoes, evenly spread, in rows over the body of your tree.
  8. Finally, slice your capsicum and use to create a star at the top of your tree.
  9. Serve with your favourite dips and watch as it disappears!
